Citrus Glazed Lemon Cake Bars

I love the bright and refreshing taste of lemon in just about anything. When you don’t feel like a heavy rich dessert, using something with citrus is the perfect way to end a meal! These lemon cake bars are so yummy and the ultimate combination of tartness mixed with sweetness! They make a beautiful gift wrapped up in a pretty box and keep well for several days in an airtight container. The recipe only makes 9 nice sized bars, so if your house is like mine, you won’t have any leftover past the first day!!
Citrus Glazed Lemon Cake Bars
Makes: 9 large or 12 medium sized bars Prep time: 30 minutes Bake time: 20 to 22 minutes
Ingredients
2/3 cup unsalted butter at room temperature
1 cup granulated sugar
4 tablespoons freshly squeezed lemon juice
2 medium eggs at room temperature
zest of 1 large lemon
1/2 teaspoon best quality vanilla extract
1/2 teaspoon salt
1 and 1/4 cups all purpose flour
Citrus glaze
1 and 1/2 cups powdered sugar
5 tablespoons lemon juice
Directions
Preheat oven to 350 degrees. Line an 8×8″ pan with aluminum foil and butter it well. Make sure the foil comes up on the sides of the pan so you can pull the entire pan of bars out when they are cool. In a mixing bowl, beat the butter and sugar until light and fluffy. Add the vanilla and eggs, one at a time, scraping down the bowl as you go. Add the zest and lemon juice and stir until combined. Add the flour and salt and mix until you don’t see the flour anymore. Spread into your prepared pan with an offset spatula. Bake for 20-22 minutes, or lightly golden brown. Cool completely and then remove the foil. Whisk together the glaze ingredients until smooth and creamy. Place the cooled whole sheet of bars onto a baking rack with wax or parchment paper underneath and pour the glaze over the top. When completely cool, cut into squares and place a few lemon zest coils on top of each one for decoration.
