Stovetop Chocolate Peanut Clusters

Makes: 30-40 large clusters Prep time: 20 minutes Chill time: 30 minutes

Ingredients

16 ounces of unsalted peanuts

16 ounces salted cocktail peanuts

1, 11.5 ounce bag of semi sweet chocolate chips. ( I used Guittard )

1, 11.5 ounce bag of milk chocolate chips. ( I used Guittard)

2, 10 ounce bags peanut butter chips

1, 24 ounce bag of white chocolate chips

Directions

Line several baking sheets with parchment paper and grab a large ice cream scoop.  Set aside.

Layer all of the ingredients in a large, heavy bottom pot.

Over a low heat, stir all of the ingredients constantly until the chocolate, peanut butter and white chocolate are melted. This took me about 10 minutes over a low, gas flame. It may take you a few minutes more on an electric stove.  The key is to stir constantly and do not walk away from the pot. It takes some elbow grease to stir all of the ingredients up from the bottom and keep going for 10 minutes or until everything is combined and throughly melted.

Take the pot immediately off the stove.

With your large ice cream scoop, scoop the clusters onto your baking sheets.  Place in the fridge for about 30 minutes until they are completely set.

Place in airtight plastic containers and store in the fridge for up to two weeks.  You can also wrap them well and freeze them for several months.
