Healthy Chocolate Peanut Butter Eggs

Hey everyone!! How has your week been so far? I feel like lately, I have been doing a lot of stress eating due to still dealing with my post op recovery, so I decided to come up with a new healthy recipe!!

A few weeks ago, I made homemade chocolate covered peanut butter eggs and they were gone within a day or two! I can’t lie…they were out of this world, but it didn’t make me feel very good that I couldn’t keep my hands off of them and ate way more of them than I should. This prompted to me to figure out a way to make them healthier, but still tasty.

I did a lot of experimenting with this recipe, but I really like the results. I used my favorite healthy dark chocolate, which is K’ul chocolate, to dunk the eggs in and give them the most scrumptious taste!! (You can purchase K’ul chocolate  buy clicking their logo on my homepage).

If you are on a low sugar diet, you will love these and not feel deprived in the least! They are sweetened only with Medjool dates and coconut sugar, so try not to think of what traditional peanut butter cups taste like, because these do not have the same type of sweetness. They are just delicious and will definitely satisfy your sweet tooth !!  Let me know what you think of them 🙂

K’ul chocolate not only tastes incredible, it is good for you too!

Put all of the filling ingredients in your food processor.

Using a tablespoon sized scoop will ensure all of the eggs will be the same size.

Shape the balls by hand into an egg shape.

Microwave the K’ul chocolate pieces for 1 minute, then stir.  Repeat for another minute, then stir until completely melted.

It melts so beautifully!

After you have chilled the peanut butter eggs, dunk them into the melted chocolate. Tap off the excess using a fork.

Place on a wax paper lined baking sheet, then drizzle with extra chocolate to make a pretty design.

Chill them again until the chocolate hardens.

Healthy Chocolate Peanut Butter Eggs

Makes: 50 small eggs Prep time: 30 minutes

Ingredients

8 Medjool dates

1 cup raw almonds

2 cups roasted, salted peanuts

1 cup all natural or house ground peanut butter

1/8 teaspoon salt

2 teaspoons vanilla

3 tablespoons water

4 tablespoons coconut sugar

15 to 16 ounces of K’ul chocolate, ( I used 70%)

Directions

Line 2 baking sheets with wax paper and set aside.

In the bowl of your food processor, pulse the dates until a paste forms.  Add the almonds and peanuts and process until blended.  Add the peanut butter, water, vanilla and salt and pulse until the mixture comes together. There may be some drier mixture left on the bottom of the bowl, but it will come together when you dump it into another bowl and stir with a wooden spoon.

With a tablespoon scoop, scoop balls of the peanut butter mixture.  Roll them in your hand until the ball really holds together well.  Then, shape the ball into a small egg. You should have about 50 eggs on two trays when you are finished.

Place both pans in the freezer for about 30 minutes.  While the eggs are chilling, break the chocolate into pieces and microwave in a microwave safe bowl for 1 minute, then stir. Microwave for another minute, and stir until well blended.

Take the eggs out of the freezer, and with two forks, dunk each egg in the chocolate until it is completely coated.  Tap off the excess chocolate with your fork. Place on your wax paper lined baking sheets.  Drizzle with extra chocolate to make a pretty pattern.

Place the eggs back in the fridge until the chocolate is completely hardened.

Place the hardened eggs in an airtight container lined with wax paper between the layers.  They will stay fresh in the fridge for several weeks!
