Lemon Fudgy Bars with Lemon Cream Cheese Frosting

Hi my friends! It’s almost May, and I can’t believe how fast the time is going by. Well, having a young puppy in the house makes me feel like I have a toddler all over again, so some days feel longer than others π He’s the most precious little Yorkie, but he’s a handful, and I find myself watching every move he makes so he doesn’t get into lots of trouble. Hence, this is whyI’ve been behind on everything, but I finally got around to posting this delicious recipe!! π
My lemon fudgy bars are so rich, sweet, tart too, and soooo yummy! They are the perfect Springtime dessert. I hope you love them as much as I do. A small piece goes a long way, but if you are me…you don’t stop after just one piece π

The batter is really thick!!
I ate so much of this frosting. It is so scrumptious!
They smelled heavenly in the oven. Make sure not to over bake them or they will be dry.
I made the frosting on the looser side, so you’ll want to chill the bars before cutting them so they can set up well.
I used really cute edible decorations to make them look extra festive.

Lemon Fudgy Bars with Lemon Cream Cheese Frosting
Makes: 20 large bars Prep time: 30 minutes Bake time: 18 minutes
Ingredients
Bars:
1 cup softened, unsalted butter
2 cupsΒ Dixie Crystals granulated sugar
4 large eggs
1 teaspoonΒ Nielsen Massey vanilla
2 teaspoons fresh lemon juice
2 teaspoons lemon zest
3/4 teaspoon salt
1 and 3/4 cup all purpose flour
Lemon Cream Cheese Frosting
8 ounces light cream cheese
4 tablespoons softened, unsalted butter
4 teaspoons lemon juice
4 cupsΒ Dixie Crystals confectioners sugar
Sprinkles or edible decorations if you would like
Directions
Heat your oven to 350. Grease a 9×13 inch pan and set aside
Make the bar batter:
In the bowl of your stand mixer, beat together the softened butter and sugar until light and fluffy. (About 3 minutes)
Add in the eggs, one at a time and mix until incorporated.
Add in the vanilla, lemon juice and lemon zest and mix well.
Add in the salt and flour and mix until just incorporate. Do not over mix.
Spread the batter into your prepared pan.
Bake for 18 minutes in your preheated oven.
Remove and let cool while you make the frosting.
To make the frosting
In the bowl of your stand mixer using a whisk, whip the cream cheese and butter until smooth and creamy.
Slowly add in the lemon juice and mix until combined.
Slowly add in the confectioners sugar, one cup at a time.
Add in a pinch of salt to offset the sweetness
Whip the frosting until it’s smooth and creamy.
Make sure the bars are cooled before frosting them.
Place in the fridge so they can set up before cutting them.
Keep them in the fridge for a few days and freeze any leftovers for up to 2 months.
I cut them and placed them in plastic containers in the freezer.
