Triple Layer Peanut Butter Cake with Peanut Butter Buttercream

Hey Everyone!!  I hope you are all having a wonderful October so far!! Can you believe we are only a month away from Thanksgiving already?  October also happens to be one of my favorite months too!!!  Why, you ask?? Because it is my birthday month, and I love celebrating birthdays…especially mine 🙂

As you all know by now, I have a serious peanut butter obsession!!  I absolutely love it in so many types of desserts, and even savory food, as well.  Every year, I like to bake my own birthday cake, but since I am still recovering from my hip surgery, I had a feeling it might be more challenging this year. I first started thinking of easy things to make, and then I gave in and decided to make a layer cake, which is always my favorite type of cake.  Peanut butter cake can be a bit dry if you don’t add enough moisture to the batter, so I was careful to add just the right amount of milk.  I also made the frosting extra rich to balance the flavor of the cake…the result is a moist, delicious layer cake with a sweet and rich buttercream frosting. I had so much fun setting up the photos, shooting them, then cutting a big fat piece just for me 🙂  The adorable cake topper and props are from my favorite  Feel free to click on their ad below if you would like to purchase any of their adorable party ware too!!  If you are a true peanut butter fanatic like me, you will just adore this cake!!

Use the best quality ingredients in all of your baking.. Yes, you will hear me say this a lot 🙂

Even the batter was delicious all by itself 🙂

I use a scale to measure the batter so it will be  evenly distributed in the pans and the layers will be the same size.

The layers bake up beautifully and a lovely golden brown.

Heavy cream makes the buttercream extra rich.

I actually used the same tip for piping the bottom of the cake and the rosettes on top.

An inside look after cutting the first piece 🙂

It slices beautifully and looks so pretty too!! This was my piece before I devoured the entire thing 🙂

Triple Layer Peanut Butter Cake with Peanut Butter Buttercream

Makes: 1 - 3 layer cake Prep time: 1 hour Bake time: 20 to 22 minutes

1/2 cup unsalted butter at room temperature

3/4 cups packed light brown sugar

3/4 cups granulated sugar

3/4 cup peanut butter

1/2 cup sour cream

1 tablespoon best quality vanilla

3 large eggs

2 and 1/2 cups cake flour

2 and 3/4 teaspoon baking powder

3/4 teaspoon salt

3/4 cup whole milk

Peanut butter buttercream

1 cup unsalted butter at room temperature

2 cups creamy peanut butter

3/4 cup heavy cream

6 cups confectioners sugar

1 teaspoon vanilla

To make the cake

Preheat your oven to 350 degrees.  Butter and flour 3, 8 inch cake pans.  Line each with parchment paper.

In the bowl of your stand mixer, beat together the butter and sugars until light and fluffy.

Add the sour cream, eggs, vanilla and peanut butter.  Blend well.

In another bowl, whisk together all of the dry ingredients.

Alternate adding the flour mixture and milk to the peanut butter mixture until just combined.

Bake the cakes for 10 minutes, then rotate the pan.  Bake another 10 to 12 minutes or until the cakes are done.

Cool the cakes in the pan for about 15 minutes, then turn them out onto a wire rack.  Place in the fridge while you prepare the frosting.

To make the frosting

Cream together the butter and peanut butter in the bowl of your stand mixer with a whisk attachment.

Add the vanilla and cream.  Slowly add the confectioners sugar until it is completely incorporated.  Whip until smooth.

Add several scoops of frosting between each layer so that they are even.  I used an ice cream scoop and measured 3 per each layer so that they look uniform.

Frost the sides and top and smooth them out with a bench scraper.  Use a star piping tip to decorate the cake!!
