INGREDIENTS: 1/2 CUP SOFTENED ORGANIC VALLEY BUTTER 1/4 CUP GRANULATED SUGAR 3 CUPS JIF CRUNCHY PEANUT BUTTER 3/4 TEASPOON SALT 2 TABLESPOONS NIELSEN MASSEY VANILLA BEAN PASTE 4 CUPS POWDERED SUGAR 3, 10 OUNCE BAGS OF GHIRADELLI MILK OR DARK CHOCOLATE WAFERS MELTING WAFERS DIRECTIONS: IN YOUR STAND MIXER, BEAT THE BUTTER AND WHITE SUGAR TOGETHER UNTIL FLUFFY. ADD IN THE PEANUT BUTTER, VANILLA AND SALT AND MIX UNTIL COMBINED SLOWLY ADD IN THE POWDERED SUGAR UNTIL THE DOUGH FORMS ROLL THE DOUGH BETWEEN TWO PIECES OF PARCHMENT OR WAX PAPER UNTIL IT’S ABOUT 1/2 INCH THICK. PLACE ON A BAKING SHEET AND FREEZE FOR ABOUT 40 MINS. USING YOUR FAVORITE HOLIDAY COOKIE CUTTERS, CUT OUT SHAPES AND KEEP IN THE FREEZER UNTIL READY TO DIP MELT THE CHOCOLATE IN A MICROWAVE SAFE, DEEP, SMALL BOWL. MELT FOR A MINUTE, THEN ANOTHER 30 SECONDS SO ALL THE CHOCOLATE IS SMOOTH AND MELTED. TAKE OUT 2-3 CUT OUTS AT A TIME AND DIP INTO THE MELTING CHOCOLATE. LET THE EXCESS DRIP OFF AND PLACE ON ANOTHER BAKING SHEET LINED WITH WAX PAPER. I USED A CANDY FORK FOR THIS PROCESS, BUT YOU CAN USE 2 REGULAR FORKS. FREEZE ALL THE PEANUT BUTTER CUT OUTS UNTIL VERY COLD, THEN PLACE IN WAX PAPER LINED CONTAINERS. KEEP IN THE FRIDGE FOR UP TO A WEEK, THEN YOU MAY FREEZE ANY LEFTOVERS.
