    One of my favorite things about travel is getting One of my favorite things about travel is getting to experience local food and culture. We are heading to Maine for my birthday week in October, and I’m madly in love with that state. My favorite national park is Acadia, and if you’ve never been, you must go. Blueberry desserts are some of my favorite treats, and Maine blueberries are so perfect for baking. Every time we visit there, I eat blueberry 🫐 pie every day 🤤 I created these Blueberry Hand Pies with a Cinnamon Sugar Crust as a nod to such a special place !!! Get the recipe on my blog!!!!

    Happy Wednesday my friends. I have to say it…my Happy Wednesday my friends. I have to say it…my banana bread is the absolute best, and so many of it you have asked for the recipe. Here you go!! Make sure to follow my page, and ask your sweeties too also. 🍌🍌🍌🍌🍌🍌🍌. Ingredients – Classic Banana Bread with Oil Recipe (No Butter Banana Bread)
1/2 Cup – Vegetable Oil (use a neutral tasting vegetable oil such as corn or canola)
2 – Large Eggs
3 – Bananas (ripe & large sized)
2 Cups – Flour (all purpose flour)
1 Cup – White Granulated Sugar
1 Teaspoon – Vanilla Extract
1 Teaspoon – Baking Soda
1 Teaspoon – Baking Powder (aluminum free)
1/2 Teaspoon – Salt
Servings – Roughly 12 slices
Equipment required for this recipe – Measuring cup & spoons, mixing bowl, long wooden spoon, 9 by 5 bread pan, oven mitts, silicon spatula, cooling rack and an oven.
Instructions – Classic Banana Bread with Oil Recipe (No Butter Banana Bread)
Preheat oven to 325 degrees F.
Mash bananas with a fork.
Lightly beat eggs.
Stir eggs, bananas and vegetable oil together.
Mix in remaining ingredients. Stir until the batter is fully mixed.
Optional – If you want to enhance this “basic” no butter banana bread, you can stir in a cup of your family’s favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
Bake in the oven for 65-70 minutes or until golden brown.
Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

    So, last week, crazy me decided it was a good idea So, last week, crazy me decided it was a good idea to buy some platform slides. Maybe the tallest I own. Long story short, I tripped sideways over my gel mat and fell HARD straight down on my tailbone 😢. So now, I’m dealing with either a very badly bruised or broken tailbone. I’m no stranger to pushing through pain because I’ve done it all my life as an athlete and as a chronic back pain sufferer. This certainly didn’t help. 🥲🥲🥲🙃. So yesterday I spent all day baking and cooking. Homemade pizza and my crazy big peanut butter cookies 🍪 Today, I’m hurting quite a bit, but I sure made some yummy treats. ☺️ I think I need to be more careful with my tootsies 👠  This yummy pizza dough recipe is on the back of the @fleischmannsyeast pizza yeast package !!! I used @kingarthurbaking 00 flour which is a game changer when it comes to pizza too 🍕
    Holy peanut butter cookie balls 🥜 🍪 I just m Holy peanut butter cookie balls 🥜 🍪 I just made a peanut butter cookie recipe, scooped it into balls, then rolled the entire ball in a mixture of milk and semisweet chocolate chips!!! I chilled the balls for about an hour before baking them at 325 degrees for about 15-17 minutes. Baking time was longer, and I had to keep an eye on them, but my recommendation to you is this…roll every single scoop of cookie dough in chocolate chips before you bake them. 😀😀. Always remember…whomever said dessert can be too rich, is not a person you can trust 😂😂
