Paleo Perfect Date Nut Cookies

Let’s face it..nobody can eat a lot of sugar each day and feel good about it, so eating healthy is actually very important to me!! As much as I love baking sweet sugary treats, I wouldn’t be able to stay fit and healthy if I didn’t eat a well balanced diet and work out.  I love creating healthy treats and creating new and delicious recipes that we can all feel good about eating!! Moderation is the key here in just about everything I eat and how I live my life. I have been fortunate enough to be asked to be a featured blogger on the amazing kul-chocolate.com website, and I am so very excited about it!! These delicious cookies are paleo, gluten free, date sweetened and have K’ul baking chocolate in them! ! You can eat a whole bunch and not feel guilty, so enjoy making these for your friends and family!!!


Paleo Perfect Date Nut Cookies

Makes: 12 to 15 cookies Prep time: 30 minutes Bake time: 8-10 minutes

Ingredients

1 cup raw almonds

3/4 cup fresh pitted medjool dates

3/4 cup grass fed butter

2 cage free eggs

1 tablespoon best quality vanilla

2 tablespoons coconut flour

2 cups almond flour

1/2 teaspoon fresh baking soda

1/2 teaspoon salt

1 cup chopped pecans

1 cup diced medjool dates

3/4 cup K’ul baking chocolate chopped

1/4 cup raw flaked coconut

Directions

Preheat your oven to 350 degrees. Line several baking sheets with parchment or silicone mats.  In a food processor, puree the almonds and 3/4 cup of dates until finely chopped and blended well.  Add the butter, vanilla and eggs and pulse until mixed and smooth.  Add coconut flour and almond flour, baking soda and salt and pulse until just combined.  Scrape out mixture into a large bowl and mix in the remaining ingredients.  With a small ice cream scooper, place about 8 cookies per mat. Gently flatten them with the palm of your hand.  Bake for about 8-10 minutes until they are lightly golden brown.  Let cool before moving them to a baking rack.  The cookies will be crumbly, so be careful while they are warm.  Place in airtight containers when they are completely cool.
