No Churn Copy Cat Cherry Garcia Ice Cream

Hi Everyone!!  WOW…it feels like forever since I have been in front of  my computer posting a new recipe on my blog!!  Actually, it’s been almost 4 weeks since I had my hip replacement surgery, and I am just starting to feel a bit more like myself as each day passes.  Just a little about me..I was born with hip dysplasia…so, from the very beginning of my life, my hips were technically in the wrong position which caused them to wear out at a young age.  Between that issue and being an athlete all my life, it was time for me to take care of my other hip…So now, I am just beginning to feel like I am able to do many of the things that we all take for granted…like walking, sitting in a chair, sleeping easily … I had a fantastic orthopedic surgeon who did an anterior approach hip replacement, which makes for a much quicker recovery…  For anyone of you who have had any kind of joint replacement, you know it is not for the faint of heart.  If you have gone through it, I would love to hear your stories 🙂  For all of you who followed me on social media and wished me well as I posted pictures of treats from a while back…thank you so much for your sweet words of kindness and encouragement…they have meant the world to me 🙂

So, back to what I love so much….DESSERT 🙂  and creating new recipes!!!  My sweet husband, who happens to be my rock and the most selfless and caring man on the planet, absolutely loves Cherry Garcia ice cream.  So, I figured how hard can it be to come up with a copy cat version of that expensive store bought brand?   The result is really delicious and sublimely sweet and tart at the same time.  The best part is that it is SO easy to make and requires no ice cream maker.  I hope you love this yummy treat and get to enjoy it with your favorite people 🙂  Again, thank you for all of the love and support you have shown me during my recovery!! I have the MOST wonderful subscribers 🙂 Make sure you use the best quality ingredients, and keep the cream and your mixing bowl and whisk VERY cold!

Gently fold in all remaining ingredients after you have beaten the cream to stiff peaks.

Spread the mixture in your plastic wrap lined loaf pan and freeze overnight.

No Churn Copy Cat Cherry Garcia Ice Cream

Makes: About 2 and 1/2 pints Prep time: 25 minutes Freeze: 4-6 hours or overnight

Ingredients

1 – 14 ounce can sweetened condensed milk

2 cups very cold heavy cream

2 teaspoons best quality vanilla

pinch of salt

1 – 4 ounce bar semi sweet chocolate, chopped

1 cup organic bing cherries, pitted and chopped

Directions

Line a loaf pan with plastic wrap with enough hanging over that you will be able to fully cover the ice cream when it is done.  Place your mixing bowl and whisk in the freezer for about 10 minutes.  Whip the cream to stiff peaks and gently fold in the condensed milk.  Be careful not to deflate the air in the cream.  Add the vanilla and pinch of salt.  Gently fold in the chopped chocolate and cherries.  Fill the loaf pan with the ice cream mixture and freeze for several hours, or for best results, overnight!

I am so glad your surgery went well and you are back because I’ve missed your recipes. You look too young for such a big surgery, so happy all is well now.
