Dulce De Leche Banana Cream Pie

Hey everyone!! It’s been a crazy few weeks here, but I finally got around to a new blog post, and I felt like it was time for a no bake dessert!! (well, mostly no bake)  🙂 Bananas are so plentiful in the markets, and so uber sweet these days that I thought I needed to develop a recipe including them in some delicious way 🙂

Anything with caramel is always my favorite dessert, and I just love any kind of nuts too.  My hubby however, hates nuts, so I just have to override him sometimes and hide them in the recipe, or just tell him that I promise he will love whatever I make..nuts or no nuts 😉

As you guys know, I am not one to use ready made products in my baking, but sometimes, a girl’s gotta do what a girl’s gotta do 🙂  I could have made homemade Dulce De Leche, but I found a really delicious brand already made in the the grocery store. Nowadays, every grocery store carries it, so you don’t have to worry about not being able to find some. If you love making your own Dulce De Leche, please be my guest 🙂

Fresh whipped cream is a must!! Never, ever ever will I used the ready made kind in the tubs, if you know what I mean.  That stuff has really bad ingredients, so making your own will always be better, and really makes the difference in the outcome of any dessert that calls for whipped cream. I promise you that once you start making your own whipped cream, you’ll never use the store bought stuff again!

I hope you love my Dulce De Leche Banana Cream Pie with a pecan graham cracker crust!! The last part of the description was just too long for the title 🙂 Truth be told… when I went to photograph a slice after I served it at a dinner party, I had to step out for a moment to walk my dog. 5 minutes later when I walked back in the door, the entire pie was gone!!! So, no single slice shots 🙁  I hope you love this pie as much as we all did!!! xoxo

YES!! Eat more pie 🙂  And, look at these mini bananas!! I just bought them for the photo because they were so cute 🙂

Toasted pecans have the best flavor!

I used my food processor to chop them up, but not too finely!

Blend the graham cracker crumbs, pecans, sugar and butter to make the crust.

Press the crust mixture into the prepared pie pan.

The crust smells heavenly while it bakes 🙂

Spread the dulce de leche over the cooled crust.

Slice the bananas and add a bit of lemon juice so they don’t turn brown.

Beat the softened cream cheese, sugar, vanilla and 2 tablespoons of the dulce de leche.
Whip the cream to stiff peaks

I used a microwave safe measuring cup to heat the Dulce.Add the sliced bananas over the top of the dulce.

Sprinkle some of the toasted pecans over the bananas.

Spread most of the whipped cream over the top. Leave some for additional piping.

Smooth the caramel whipped cream over the top.

Pipe some rosettes on top. You should have plenty of leftover whipped cream to decorate the top!

Sprinkle some nuts over the rosettes and drizzle some caramel sauce over the top for a beautiful finish!

Dulce De Leche Banana Cream Pie

Makes : 1, 10 inch pie Prep time: 30 minutes Bake time for the crust: 10 minutes

Ingredients

Crust

2 cups graham cracker crumbs

1/2 cup chopped toasted pecans

1/4 cup Dixie Crystals Brown Sugar

1/2 cup unsalted, melted butter

Filling

2 large bananas, sliced on an angle

1 teaspoon lemon juice

3 cups heavy cream

1 cup Dixie Crystals Powdered Sugar

2 teaspoons best quality vanilla extract

8 ounces softened cream cheese

1 and 1/2 cups Dulce De Leche, plus 2 tablespoons to add to the whipped cream

3/4 cup toasted, chopped pecans for sprinkling over the bananas and on top of the finished pie

caramel sauce for drizzling over the top, (optional)

Directions

Preheat your oven to 350 degrees.  Butter a 10 inch glass pie dish well.  Flour it lightly too so the pie crust won’t stick to the pie pan.

Toast all the pecans, (1 and 1/4 cups total), on a non stick pan.  Chop them, or put in your food processor and pulse several times.  You don’t want the nuts chopped too finely. (see my photo above).

Mix 1/2 cup chopped nuts, the graham cracker crumbs, melted butter and brown sugar together.

Press into your prepared pie pan, and all the way up the sides. You can use your hands, or a measuring cup to help you press the crust into the pan and make sure it’s even all the way around.

Bake the pie crust for 8 to 10 minutes.

Cool the pie crust in the fridge after it has cooled down.

Make the caramel whipped cream while the crust is cooling.

Whip all 3 cups of heavy cream to stiff peaks and place in the fridge.

In another bowl, whip together the softened cream cheese, 1 cup of confectioners sugar, vanilla extract and the 2 tablespoons of Dulce until fully incorporated.

Fold in the whipped cream until the mixture is full incorporated.

Heat the 1 and 1/2 cups Dulce De Leche in the microwave for 30 seconds so it is easier to spread.

Spread the Dulce all over the chilled pie crust bottom, making sure to go up the sides.

Slice the bananas on a slant so they are prettier 🙂

Sprinkle the teaspoon of lemon juice and toss to coat.

Layer the bananas over the top of the Dulce De Leche.

Sprinkle about 1/2 cup of the remaining toasted pecans over the banana layer.

Spread enough of the Dulce whipped cream just until you reach the top of the pie dish or a bit over.

Pipe rosettes on top of the smooth layer.

Sprinkle a few of the remaining nuts over the rosettes and drizzle with some caramel sauce, if you desire.

Keep the pie in the fridge until you are ready to serve it.

Getting the first slice out is always a bit tricky, but after that, the slices should come out smoothly.

Keep any remaining pie in the fridge 🙂
