Mini Chocolate Chip and M&M Cookie Pie

My oh my, how I love pie!!  I just adore all kinds of pie, from cream pies to fruit pies, to…chocolate chip cookie pies!!  Because of the spring season, so many of our local stores now have those pretty colored pastel M&M’s and chocolate eggs that I cannot wait for each year!! The colors just make me happy, and everyone knows about my relationship with chocolate…It is a love that lasts a lifetime, and consumes much of my thoughts each day 🙂  This is a simple one bowl recipe, and looks so pretty in your favorite pie pan!!  I have to say that when it came out of the oven, I could hardly wait for it to cool before I cut it.  That is always the hardest part for me, but it helps in getting my pictures just right and not burning my mouth too badly either 🙂  You can use any type of chocolate chips that you like in the pie, and any flavor of M&M to decorate the pie too!! My favorite is either milk or semi sweet chocolate, so that is always my go to in a recipe, but have a little fun and experiment with your favorite flavors!!

Using the best ingredients, makes all the difference in your baking!! Have you ever tried chocolate extract? If not, you MUST!! I use Ballard Extracts and they are out of this world!!
Simple one bowl recipe.

Butter your favorite pie pan and spread the dough evenly.
Place 1/2 cup M&M’s on top and press them lightly into the dough.

Cover the pan with foil about 20 minutes into the baking process, to prevent the pie from getting too brown.

Cool on a wire rack for about 30 minutes before cutting!
Slice and enjoy with a big glass of milk!!!

 

Mini Chocolate Chip and M&M Cookie Pie

Makes: One 9 inch pie Prep time : 25 minutes Bake time : 30 to 35 minutes

Ingredients

3/4 cup unsalted butter at room temperature

3/4 cup brown sugar, ( I use Dixie Crystals)

1/4 cup granulated sugar, ( I use Dixie Crystals)

1 large egg at room temperature

1 egg yolk at room temperature

2 cups all purpose flour

1/2 teaspoon salt

2 teaspoons fresh baking powder

1 teaspoon chocolate extract, ( I use Ballard Extracts)*

1 teaspoon vanilla extract, ( I use Ballard Extracts)

1 cup mini chocolate chips

1/2 cup M&M’s

*If you don’t have chocolate extract, you can use 2 teaspoons of vanilla extract!

Directions

Preheat your oven to 350 degrees, (a bit less if you use a convection oven).  Butter your pie dish and set aside.  In your stand mixer, beat butter and sugars until combined.  Add egg, egg yolk and extracts and blend well.  Add salt, baking powder and flour and mix until just combined, being careful not to over mix!  Blend in the mini chips until evenly distributed.

Spread the dough into your prepared pan and place the M&M’s on top, pressing down gently into the dough.  Bake for 20 minutes, then cover lightly with foil. Bake for an additional 10 to 15 minutes, being careful not to over bake. I like my chocolate chip cookies very soft in the middle, so mine looked a bit under baked after 30 minutes, but I took it out then.  It may sink a little after you take it out if you like it a bit under baked, but that is ok!!  Cool completely on a wire rack for about 20 to 30 minutes before cutting it.
