Stuffed Cookie Butter Blondies

Hi my friends. Happy ALMOST Spring!! I can’t believe how quickly the time has flown by. So much has been happening since my last post, and I am desperately trying to catch up on uploading all of my photos and new recipes!

I find myself posting daily on all my social media platforms and spending so much time there, that I have gotten way behind in shooting for my blog. Also, I’ve been struggling quite a bit with my back issues since our trip to Italy and am actually going to have surgery in April. Usually surgery isn’t something I would look forward to, but I am truly hoping that this procedure gives me the relief I need to just get through the day to day craziness of my life. I will keep you posted and let you know how it goes. Fingers crossed!!!

So, these stuffed cookie butter bars came to life when I decided to order some super popular blondies that seem to be everywhere on social media and online. They are huge, come in all flavors and are quite pricey too. To be honest, I wasn’t impressed. Especially at almost 10 dollars per blondie!! When I tried the cookie butter flavor, I knew I could recreate them to taste so much better and be simple to make too! I got a lot of inspiration in other recipes to create, so stay tuned!!

If you are a cookie butter nut like I am, you will flip over these blondies. I think the pan weighed about 8 pounds before it went into the oven 🙂 You can even under bake them slightly, then refrigerate overnight so they firm up. I can promise they are absolutely out of this world. Let me know if you fall in love with them. Make sure and use the best brown sugar for this recipe which is, Dixie Crystals light brown sugar.

You don’t have to have this Lotus Biscoff chocolate bar for the top of the blondies, but it really sets these bars over the top. I found it at Walmart! Here’s a link: Lotus Biscoff cookie butter filled bar

 

You’ll need 2 cups of melted butter for this recipe. I use Organic Valley unsalted butter!

Add the butter and brown sugar to a large bowl and stir to combine.

Add in your eggs and blend well until the eggs are fully incorporated. Add in your vanilla too.

Add the flour and salt and mix until the batter is blended well. Do not over mix it!

Fold in your bag of white chocolate chips.

Spread half of batter into the pan.

Press whole Lotus cookies over the top of the batter. Spread the remaining batter over the top and smooth out.

Melt your 1/2 cup cookie butter in the microwave for about 20-30 seconds until it is runnier and pourable.

Drizzle the warm cookie butter over the top of the blondies.

With a knife, swirl in the cookie butter.

Place broken cookie pieces over the top of the swirled batter. Drizzle a bit more of the melted cookie butter.

They smelled sooooo good when they came out of the oven.

Cut your chocolate bar into pieces and place evenly on top of the warm bars.

I placed the bars in the fridge overnight and then cut them up.

Decadent, delicious, devine…so many words to describe these beauties!!

Stuffed Cookie Butter Blondies

Makes: 20 blondie bars Prep time: 25 minutes Bake time : 42 to 50 minutes

Ingredients

2 cups, Organic Valley unsalted butter, melted

4 cups, Dixie Crystals light brown sugar

Organic Valley eggs

1 tablespoon vanilla extract

1 and 1/2 teaspoon salt

4 cups all purpose flour

1, 12 ounce bag of white chocolate chips

1/2 cup Biscoff cookie butter

1 bar, Biscoff milk chocolate bar stuffed with cookie butter

1 package of Lotus Biscoff cookies

Directions

Preheat your oven to 325 degrees. Line a 9×13 inch metal pan with parchment paper and set aside.

Melt your butter in the microwave and set aside.

In a large bowl, stir together your butter and brown sugar

Add in the vanilla and salt and stir until combined.

Add in the eggs, one at a time and mix until combine.

Fold in the flour and mix until just combined and you don’t see any flour left.

Mix in the white chocolate chips and combine well.

Spread half of the batter into your prepared pan.

Place whole Biscoff cookies over the batter and gently press. There should be 5 across and 4 down.

Spread the remaining batter over the cookies and smooth the top.

Melt the cookie butter in the microwave for about 30 seconds until it can be easily drizzled

Drizzle about 1/3 over the top of the batter and swirl into the batter with a knife.

Place broken cookie pieces over the top.

Drizzle remaining melted cookie butter over the top of the cookies.

Bake in your preheated oven for 42 to 50 minutes until the top is golden brown.

The middle will still be very gooey and that is totally ok.

Cut your chocolate bar into pieces, (as soon in the above photos)

Place on top of the blondies after they have cooled for about 10 minutes.

Place the entire pan in the fridge for about an hour or overnight before cutting them, as they will be very gooey.

They will keep well for 2-3 days wrapped in wax paper.

Wrap any leftovers in wax paper and foil and freeze for up to a few months.
