It’s FIRE!CRUST: 2 AND 1/2 CUPS ALL PURPOSE FLOUR 1 TEASPOON SALT 1 CUP COLD, UNSALTED BUTTER 1/2 CUP ICE WATER POT PIE: 2 CUPS YELLOW POTATOES, CUBED AND COOKED 1 CUP BUTTER 1 CUP ALL PURPOSE FLOUR 1 CUP DICED YELLOW ONION 1 AND 3/4 TEASPOON SALT 2 TEASPOONS GARLIC POWDER 1 TEASPOON PEPPER 3 CUPS CHICKEN BROTH 1 CUP HALF AND HALF 1/2 CUP WHOLE MILK 4 CUPS WHITE MEAT ROTISSERIE CHICKEN CUBED 1 AND 1/2 CUPS FROZEN PEAS 1 CUP COOKED CARROTS (OPTIONAL) DIRECTIONS: PREHEAT YOUR OVEN TO 400 DEGREES. PLACE ALL CRUST INGREDIENTS IN YOUR FOOD PROCESSOR AND BLEND UNTIL THE DOUGH COMES TOGETHER INTO A BALL. DIVIDE IN HALF AND CHILL WHILE YOU PREPARE THE FILLING IN A LARGE DUTCH OVEN, MELT YOUR BUTTER AND SOFTEN THE ONIONS. STIR IN THE FLOUR UNTIL IT MAKES A PASTE. STIR FOR A MINUTE ON LOW UNTIL THE RAW FLOUR IS COOKED OUT. TURN YOUR HEAT TO MEDIUM AND ADD IN HALF AND HALF, BROTH, AND MILK. STIR UNTIL THE MIXTURE THICKENS AND BUBBLES. ADD IN THE POTATOES, PEAS AND CORN AND REMOVE FROM HEAT. COOL COMPLETELY BEFORE FILLING THE PIE CRUST. WHEN THE PIE CRUSTS ARE CHILLED, ROLL THEM OUT TO ABOUT AN INCH AND A HALF BEYOND THE PIE CRUST. LINE YOUR PIE CRUST AND FILL WITH THE COOLED MIXTURE. TOP WITH THE REMAINING CRUST AND TUCK AND CRIMP YOUR PIE DOUGH. BRUSH WITH A MIXTURE OF AN EGG YOLK AND A TEASPOON OF CREAM. CUT ABOUT 5 SLITS IN THE PIE SO STEAM CAN COME OUT. BAKE IN THE CENTER RACK FOR ABOUT 30 MINUTES. CHECK THE PIE AT AROUND 20 MINUTES TO MAKE SURE IT’S NOT GETTING TOO DARK. IF SO, PLACE SOME FOIL OVER THE TOP. THE CRUST SHOULD BE GOLDEN BROWN. SERVE WARM!!
